Ingredients
1 ½ cups all purpose flour
1 ½ tsp baking powder
1 tsp salt
2 tbsp olive oil
½ cup soya milk or water
Method
Mix the dry ingredients together.
Add the wet ingredients slowly into the dry ingredients while stirring. Use your hands to mix when it becomes to thick to stir. Add a tablespoon of flour if it's too sticky or a teaspoon of water if it's too crumbly.
Cover the bowl and leave it to rest for 10 minutes.
Divide the dough into 4 pieces and roll into balls. Flatten each with a rolling pin or the palm of your hand until about 1/4 inch thick.
Add some olive oil to a skillet on a low-medium heat, and cok each flatbread for 3 to 4 minutes on each side until golden brown.
