Pita
Overview

Ingredients
1 cup water
2 tsp active yeast
½ tsp sugar
2 ½ cups plain flour
2 tsp salt
2 tbsp extra virgin olive oil
½ cup plain flour (for dusting)
Method
Add the water to a bowl and put it in the microwave for 30 seconds to make it lukewarm.
Add the water, yeast and sugar into a large mixing bowl, and stir in until dissolved.
Add about 1/2 cup of flour and whisk together. Then leave the brown in a warm place uncovered to activate and bubble (about 15 minutes).
Add the salt, olive oil, the remaining 2 cups of flour, and stir until it is a sticky mess.
Flour a surface and knead the dough lightly until smooth, then cover and leave to rest for 10 minutes, before kneading again for a few more minutes.
Be careful not to add too much flour, as the dough should remain moist.
Coat the mixing bowl with a little oil and put the dough back in. Then cover the bowl and leave it in a warm place to double in size (about 1 hour).
Divide the dough into about 8 equal pieces and roll into balls. Cover for 10 minutes and leave them to rest.
Use a floured rolling pin to shape the breads on a flour surface.
Heat some olive oil over a medium high heat and cook each pita for a couple of minutes on each side.
