    Ingredients

    • 1 cup water

    • 2 tsp active yeast

    • ½ tsp sugar

    • 2 ½ cups plain flour

    • 2 tsp salt

    • 2 tbsp extra virgin olive oil

    • ½ cup plain flour (for dusting)

    Method

    1. Add the water to a bowl and put it in the microwave for 30 seconds to make it lukewarm.

    2. Add the water, yeast and sugar into a large mixing bowl, and stir in until dissolved.

    3. Add about 1/2 cup of flour and whisk together. Then leave the brown in a warm place uncovered to activate and bubble (about 15 minutes).

    4. Add the salt, olive oil, the remaining 2 cups of flour, and stir until it is a sticky mess.

    5. Flour a surface and knead the dough lightly until smooth, then cover and leave to rest for 10 minutes, before kneading again for a few more minutes.

      Be careful not to add too much flour, as the dough should remain moist.

    6. Coat the mixing bowl with a little oil and put the dough back in. Then cover the bowl and leave it in a warm place to double in size (about 1 hour).

    7. Divide the dough into about 8 equal pieces and roll into balls. Cover for 10 minutes and leave them to rest.

    8. Use a floured rolling pin to shape the breads on a flour surface.

    9. Heat some olive oil over a medium high heat and cook each pita for a couple of minutes on each side.
