American pancakes

Overview
These are so quick and easy to make on a lazy weekend morning. Beware the sugar-crash.

Ingredients
1 cup self-raising flour
2 tbsp caster sugar
1 tsp baking powder
good pinch sea salt
⅔ cup soy milk
¼ tsp vanilla extract
maple syrup
Method
Add the flour, sugar and baking powder to a large bowl and gently whisk to combine.
Add the milk and vanilla and mix.
Heat a pan over medium heat, add butter, then pour the pancake batter. Cook for 3-4 minutes until bubbles form on top. Flip and cook the other side.
Drizzle with maple syrup to serve.
