American pancakes

Overview

These are so quick and easy to make on a lazy weekend morning. Beware the sugar-crash.

Ingredients

  • 1 cup self-raising flour

  • 2 tbsp caster sugar

  • 1 tsp baking powder

  • good pinch sea salt

  • ⅔ cup soy milk

  • ¼ tsp vanilla extract

  • maple syrup

Method

  1. Add the flour, sugar and baking powder to a large bowl and gently whisk to combine.

  2. Add the milk and vanilla and mix.

  3. Heat a pan over medium heat, add butter, then pour the pancake batter. Cook for 3-4 minutes until bubbles form on top. Flip and cook the other side.

  4. Drizzle with maple syrup to serve.
