Tofu scramble

Overview

This is a great one to add to a fry-up, have in a baguette, or just with some toast.

Ingredients

  • 8oz (220g) extra firm tofu

  • 1 tbsp butter

  • 2-3 cloves garlic

  • ½ red or white onion

  • 2 tbsp nutritional yeast

  • ½ tsp turmeric

  • ½ tsp paprika

  • 1 tsp mustard powder

  • ¼ tsp black salt (kala namak)

  • ¼ cup soy milk

Method

  1. Fry finely chopped garlic and onion.

  2. Add tofu to pan and mash it into chunks with a fork; fry until lightly browned.

  3. Add the nutritional yeast, turmeric, paprika, mustard powder and black salt to the frying pan.

    Then add the soy milk and mix it all together.

  4. Fry until you’ve cooked off the milk and achieved your desired consistency.

  5. Serve with toast or a fry-up.
