Pancakes

Overview

This has to be one of the most special recipes on our little site because our first anniversary was on the 16th of February 2010 (Pancake day!).

Ingredients

  • 200g (1 ½ cups) plain flour

  • ½ tsp salt

  • 1 tbsp sugar

  • ½ tsp baking powder

  • 4 tbsp aquafaba

  • 400mls (1 ¾ cups) soy milk

  • 1 ½ tbsp melted butter

  • 1 tsp vanilla extract

Method

  1. Add flour, salt, sugar, and baking powder into a large mixing bowl and combine.

  2. Add the aquafaba, butter and vanilla to the bowl, add the milk gradually, and whisk gently until the batter is smooth. Allow to rest for 10 minutes.

  3. Butter up a hot frying pan on the hob, then pour a thin layer of the batter and cook. 

  4. Serve with lemon and sugar, or golden syrup and sugar. Or whatever you like!
