Ingredients
100g butter
170g caster sugar
90g plain flour
6 tbsp aquafaba
50g cocoa powder
1 tsp baking powder
160ml soy milk
50g dark chocolate
4 heaped tbsp crunchy peanut butter
Method
Cream together the butter and sugar, slowly adding in the aquafaba and soy milk.
Sieve flour, cocoa powder and baking powder into a bowl and mix.
Transfer the dry ingredient mix into the wet and stir until a smooth batter has formed. Add in your chocolate chunks and fold through to ensure the chunks are evenly scattered throughout.
Pour the mixture into a deep lined baking tray and swirl in the peanut butter.
Place the tray in a preheated oven at 170°c and bake for 30-35 minutes.
Once baked, set aside to cool, cut to your desired brownie bite size and top with a sprinkle of crushed salted peanuts.
