Butternut & lentil dahl

Overview
This is something we often make ahead of time to serve fresh when entertaining. It is really simple, well recieved, and gives you more time to spend with guests instead of hiding away in the kitchen (looking at you Az).

Ingredients
2 cups red lentils
4 cups butternut squash
1 onion
2 cloves garlic
½ tsp ground ginger
1 tbsp curry powder
2 tsp ground coriander
2 tsp garam masala
2 tsp turmeric
2 tsp ground cumin
1 tsp salt
1 can coconut milk
1 can diced tomatoes
3 cups stock
After cooking
½ lime
salt
Method
Finely chop onions, garlic and chili peppers, and cube up butternut squash.
Combine all ingredients in slow cooker and cook on low for 6-8 hours.
Mash everything up, or serve as is.
When dishing up, add lime juice and salt to taste.
