Fried potatoes and brussels sprouts

Overview

Really love this for a filling eat on a cold weekday evening.

Ingredients

  • 4 - 6 potatoes

  • 150g brussels sprouts

  • olive oil

  • salt

  • pepper

  • ¾ tsp garlic powder

  • 2 tsp nutritional yeast

  • 2 tbsp butter

  • 2 sprigs of rosemary

Method

  1. Chop potatoes to 1 inch (ish) cubes and put in cold water.

  2. Clean and remove outer leaves, then half (or quarter) brussels sprouts.

  3. Mix olive oil, salt, pepper, little garlic powder and nutritional yeast with brussels in bowl.

  4. Pre-heat pan (I used carbon steel pan) with olive oil in it.

  5. Add the prepared potatoes with a little salt, pepper and butter.

  6. Flip every so often to avoid potatoes sticking to the pan.

  7. Put the lid on pan so the potatoes get a bit steamed; add a little more oil as required.

  8. After the potatoes look almost done (about 10-15 mins), add brussels into pan.

  9. You can add add garlic and rosemary to potatoes here if you would like.

  10. Let the brussels crisp, but stir frequently so they don't burn.

  11. Optional: You can put lid on the pan so they get a bit steamed, adding a little more oil as required.
