Tacos

Overview

It's so nice to eat mushrooms and not even have to acknowledge that you are eating mushrooms!

Ingredients

  • ¾ tub of shiitake mushrooms

  • ½ red onion

  • 1 bell pepper

  • 2 cloves garlic

  • 2 chili peppers

  • 1 can black beans

  • ¾ can chopped tomatoes

  • ½ tsp coriander

  • 1 tsp cumin

  • 1 tsp mild chili

  • ½ tsp hot chili

  • 1 tsp smoked paprika

  • ½ tsp parprika

  • 2 tsp tamari

  • 1 piece dark chocolate

  • taco shells

  • lettuce

  • salsa

Method

  1. Slice mushrooms and onion into chunks.

  2. Fry on a low heat until soft, stirring continually so they don't burn.

  3. Slice and add 1 bell pepper, stir until soft.

  4. Dice garlic and chili peppers and add to pan.

  5. Cook for a couple of minutes.

  6. Rinse and drain beans, then add to pan.

  7. Turn heat up a little and stir for a few minutes.

  8. Sprinkle and mix the spices in.

  9. Build tacos and serve.
